Restaurant inspections: improper chilling in a popular restaurant; 42 satisfactory; 2 previous violations corrected


Here are the food service inspections reported by the Onondaga County Health Department from May 1-7:

Critical Violations: About 18-20 pre-cooked breakfast sausages found chilling in a pan over ice at 52-58 degrees. According to the cook, the sausage has been in this skillet on ice for about an hour and forty-five minutes (corrected put back in cooler).

A half pot of cooked chicken and mushrooms tempered to 99-101 degrees sitting on a kitchen table. The pan is covered with plastic wrap and aluminum foil. The depth of the food is about an inch and a half. According to the employee, the food was removed from cooking approximately 45 minutes before and left uncovered to cool until recently when it was covered. The second pan held about eight stuffed peppers at a temperature of 130 degrees and cooled uncovered. It was then covered in the same way with plastic wrap and aluminum foil. According to the employee, the peppers were taken out of the oven about 30-45 minutes before (corrected – both pans partially uncovered to let the heat escape and put back in the cold room at 39 degrees.

About 2 to 3 pounds of cooked hash browns stored in a plastic pan at 95 to 110 degrees and served with other breakfast foods. According to the cook, the potatoes had been in the pot for about 45 minutes to an hour (corrected – potatoes were reheated to 165 degrees minimum and left to cool uncovered at room temperature until they reached 120 degrees and then placed in a cooler).

Offences: Squeeze bottles containing sauces, condiments and food additives are not properly labeled as to contents.

Several low coolers lacking accessible thermometers.

The meat slicer blade guard is not clean with food residue.

The underside of the flip lid of the main sandwich cooler is not clean with food soil.

Interior and exterior of gray plastic bins containing clean and sanitized uncleaned utensils with food and environmental soiling. Green wire rolling racks are not being cleaned due to food soil/grease buildup.

The exterior of the bulk flour bin is probably not clean due to handling. Bottom shelf under flat grill not clean with built up food soil/airborne grease.

Hand wash sink not working, closed due to leak in supply hose.

Single service towels missing at the three bay sink which is being used as a temporary hand washing sink (fixed).

The basement near the canned drink rack has mold.
