GREELEY – One of Greeley’s classic town center cafes gets a facelift. Roasty’s Cafe is being renovated after being sold to a family friend.
Achilles Bardos has taken over the Greeley steakhouse and is working on modernizing the restaurant’s interior. Plans for the lunch venue include more than just a fresh lick of paint and new trim. Work has begun to give Roasty new floors, walls and doors, with the hope of finishing by the end of the year.
According to cafe employees, Achille Bardos’ friendship with the former owner goes back a long way. He and Konstantinos Mavidris, the former registered agent, are from Greece.
Roasty’s has been in downtown Greeley for over 75 years. Its proximity to Greeley’s Ninth Street Plaza at 920 Eighth Ave. makes it easily accessible from downtown entertainment venues.
Plans to revamp the restaurant and align it with Greeley’s rapidly developing town center have led employees to describe the transition as an adventure. The cafe intends to remain open throughout the renovations.
